Salsa


Whole books have been written about salsas; they make a great accompaniment to fish and meats, believe me, they’re not just for chips! The basic salsa recipe of chopped tomato, onion, olive oil and salt can be combined with fresh fruits, poached shrimp, and even corn. You can even add a splash of balsamic vinegar, or even a tablespoon or 2 of fresh fruit juice. Some of my favorite salsa combinations are below:

  • Mango, red onion, cilantro and mild green chiles
  • Tomatoes, onion, herbs, and unsalted peanuts
  • Canned tomatillos, pineapple, onion, orange juice, and cilantro
  • Nectarines, fresh ginger, red onion, and lime juice
  • Pineapple, yellow bell pepper, red onion, and minced jalapeno
  • Corn kernels, red bell pepper, red onion, mango, and cilantro
  • Kiwi fruit, red onion, cilantro, and jalapeno chilies
