Close your eyes and take a whiff of the thyme-scented wonder called pissaladiere. Bite into this classic onion-and-anchovy tart and you’ll swear you’re at a bougainvillea-shaded table on a sidewalk in Nice. Street vendors throughout the Riviera region bake the pizza-like pie on huge trays and sell individual portions from sidewalk stalls. You can create your own by adding one or more of these ingredients. Pizza dough can be homemade or bought at your favorite local pizzeria.
- Multicolored bell pepper strips sautéed with garlic in olive oil
- Roasted garlic puree
- Sautéed wild mushrooms
- Pesto
- Pancetta or prosciutto
- Prepared ratatouille
- Cooked, cubed new potatoes and arugula
- Roughly chopped walnuts and some crumbled hard-boiled egg (add after baking)
- Crumbled Gorgonzola cheese and fresh sage
- A mixture of chopped herbs such as parsley, oregano, basil and rosemary
