Todd English is larger than life. His laugh is infectious, his passion for food contagious, and his love of friends and good times is certainly something I relate to. We met years ago when I had a television show on the Women's Entertainment Network. He was a guest celebrity chef and from the moment we met, we knew we'd be friends forever. I love food and the rituals that surround it, and one of my favorite ways to spend an evening is in the kitchen cooking. I look forward to the end of my day, sharing a glass of wine with friends as we prepare a meal, laughing, often uncontrollably, at one another’s stories as we experiment with new ingredients, critiquing our talents, and tweaking the blend of flavors and cooking time to perfection. Todd and I have shared some fantastic evenings together cooking in his home and mine. I've been to his restaurants in New York, Boston, and Las Vegas and recommend them to everyone. Tips from Todd.
- Use common ingredients in uncommon ways.
- Never trust a round pizza -- if the dough is made right, it will never be perfectly round.
- Don't be afraid of salt -- many chefs' biggest mistake is under-seasoning.
- Bow to seasonality -- don't force dishes around ingredients when they are not at their best.
- When looking to pair ingredients together, always look to regionality. A great rule is "If it grows together it goes together."
