Yield: Serves 12
Ingredients- 6 large ripe roma tomatoes
- 6 8-ounce balls fresh mozerella in water, drained
- 1/4 cup red wine vinegar
- 2 teaspoons Dijon mustard
- 1/3 cup olive oil
- 1 large bunch basil leaves, torn into small pieces
- 2 tablespoons chives, thinly cut with scissors
- Salt and freshly ground pepper
Instructions1. Cut tomatoes and the cheese into 1/4-inch-thick slices. Arrange them in alternating circles on a large flat serving dish.
2. In a small bowl, combine the vinegar and mustard. Whisk in the olive oil. Pour the dressing over the tomatoes and cheese. Sprinkle the salad with the basil and chives. Season to taste with salt and pepper.
