The Co-Jito is basically a mojito made with tequila instead of rum. We made it with the same classic ingredients of mint, lime and sugar.
Yield: 6-8 servings
Ingredients
3 cups fresh mint leaves
3/4 cup sugar
8 ounces freshly squeezed lime juice
24 ounces Anejo Tequila
Fresh mint springs for garnish
Instructions
Add mint, sugar, and lime juice to a pitcher and muddle with a wooden spoon to crush the mint leaves. Stir in the tequila, making sure the sugar has dissolved, then add ice. Garnish each rocks glass with fresh mint.
