with a Light Chardonnay Vinaigrette
Yield: 8 Servings
Ingredients- 2 tablespoons red wine vinegar
- 2 tablespoons Balsamic vinegar
- 1 shallot, minced
- 1/2 teaspoon sugar
- 1 tablespoon Dijon mustard
- 1/4 cup Chardonnay
- 1 cup extra virgin olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 pound mixed cleaned baby lettuces
Instructions1. Whisk together the vinegar's, shallot, sugar, mustard, and Chardonnay in a mixing bowl. Gradually add the olive oil, whisking constantly. Stir in the salt and pepper.
2. In a bowl, toss the lettuces with enough dressing to lightly coat the leaves. The remaining dressing may be stored in the refrigerator.
