with a Light Chardonnay Vinaigrette


Yield: 8 Servings

Ingredients

  • 2 tablespoons red wine vinegar
  • 2 tablespoons Balsamic vinegar
  • 1 shallot, minced
  • 1/2 teaspoon sugar
  • 1 tablespoon Dijon mustard
  • 1/4 cup Chardonnay
  • 1 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 pound mixed cleaned baby lettuces

Instructions

1. Whisk together the vinegar's, shallot, sugar, mustard, and Chardonnay in a mixing bowl. Gradually add the olive oil, whisking constantly. Stir in the salt and pepper.

2. In a bowl, toss the lettuces with enough dressing to lightly coat the leaves. The remaining dressing may be stored in the refrigerator.
