Yield: Serves 4
Ingredients- 1/2 cup olive oil
- 2 1/2 teaspoons Herbs de Provence
- 1 teaspoon Jane’s Crazy Mixed Up Salt
- 2 1/2 teaspoons Chef Paul Prudhomme’s Magic Seasoning Blends (Poultry Magic)
- 2 tablespoons Mrs Dash original blend
- 1 Whole chicken, cleaned, excess fat removed, and cut down the back with the backbone removed
- 1 cup chicken stock
- 1 teaspoon arrowroot
- 1 tablespoon water
Instructions1. In small bowl add olive oil and spices and mix. Take mixture and rub thoroughly over entire chicken and let sit for at least 2 hours, covered.
2. Pre-heat the oven to 350° F.
3. Place chicken in a roasting pan and pour chicken stock over it. Cover the chicken and place in the middle rack of the oven. Cook at 350° for 1 hour. Baste constantly (every 5 minutes)
4. Remove chicken from the oven and uncover. Turn the oven to 475° F and continue cooking for 10–15 minutes, basting often. Increase heat to 500° F and broil for 10 more minutes until chicken browns and skin is crisp.
5. Remove chicken from the pan and pour juice from the bottom of the roasting pan into a saucepan. Skim any excess fat. In a separate small bowl, mix the arrowroot and water, and then add to saucepan. Let simmer about 5 minutes, stirring constantly, and serve along with chicken.
