with a Champagne Sabayon Sauce
Yield: 12 Servings
Ingredients- 6 cups assorted berries such as strawberries, raspberries, blueberries and blackberries
- 1 tablespoon chopped mint
- 8 egg yolks
- 1/2 cup sugar
- 1 cup Champagne or other sparkling wine
Instructions1. In a bowl, combine the berries and the mint. Divide the mixture evenly among twelve 4-ounce ramekins. Arrange the ramekins on a baking sheet and set aside.
2. Preheat the broiler with the rack positioned about 6 inches from the heat source.
3. In the top of a double boiler or a metal bowl, whisk the yolks and the sugar to blend well. Set the mixture over simmering water and whisk constantly until it begins to thicken. Quickly whisk in the Champagne in small amounts, then continue to whisk until the mixture is light and frothy. Spoon the mixture over the berries in the ramekins and immediately place under the broiler until they are browned and bubbly, watching carefully to prevent burning. Serve immediately.
