Yield: 4 Servings
Ingredients- 1 pound large shrimp, peeled, deveined and cooked
- 2 plum tomatoes, seeded and diced
- 1/4 cup diced red onion
- 1/3 cup chopped fresh cilantro
- 1/2 serrano chile, seeded and minced
- 1 tablespoon chopped fresh parsley
- Juice of 1 lime
- 1/4 cup olive oil
- Salt and freshly ground pepper
Instructions1. Cut each shrimp into 4 pieces and place them in a medium bowl. Add the tomatoes, onion, cilantro, chile, and parsley and mix to combine. Add the lime juice and oil and toss to mix thoroughly. Season with salt and pepper to taste.
2. Chill until serving time and serve with tortilla chips and beer.
