Ingredients- 3 large ripe tomatoes, seeded and cubed
- 1/2 medium white onion, finely chopped
- 2 tablespoons chopped cilantro
- 1/2 green chili, seeded and chopped
- 1/3 cup red wine vinegar (or brown English cider vinegar)
- 2 tablespoons olive oil
- 1 tablespoon sugar
- Salt and freshly ground black pepper, to taste
Instructions1. Place the tomatoes, onion, cilantro, and chili in a bowl, and mix well.
2. Prepare the vinaigrette: In a medium bowl, whisk together the vinegar, oil, sugar, and salt and pepper to taste. Pour the vinaigrette over the tomato mixture along with 2 tablespoons of water, refrigerate for up to 2 hours, and serve. This raita can be stored in a covered glass or ceramic container in the refrigerator for up to 24 hours.
