Yield: 10 Servings
Ingredients- 2 cups milk
- 2 cups heavy cream
- 2 vanilla beans, each cut in 3 parts
- 6 egg yolks
- 2/3 cup superfine sugar (or regular sugar placed in food processor)
Instructions1. In a heavy saucepan bring the milk, heavy cream, and vanilla nearly to a boil. Remove from the heat.
2. In a mixing bowl, beat the egg yolks with the sugar. Gradually add the egg mixture to the cream, whisking constantly.
3. Return the pan to the heat and cook over low, stirring constantly, until thick enough to coat a spoon. Transfer to a glass bowl and stir a few minutes longer to hasten the cooling. Chill until cold. Pour into an ice cream maker and freeze according to manufacturer’s directions. Transfer to container, cover and freeze.
