EXECUTIVE CHEF (NYC)

Purpose of Position: To manage the food production and culinary team to ensure high-quality and consistent delivery of all dishes to the standards set by the operation and our contributing chefs. To oversee and manage the operating performance of the Private Dining Club. To supervise the execution of all private events.

Report to: Corporate office CCL

Job Duties and Responsibilities:

Operations:
  • Advanced culinary skills including food preparation, flavor pairings and other coking best practices
  • Exquisite, consistent and flawless production of all food orders (both restaurant and banquet) to company and Food Inc. Chef standards
  • Manage the culinary team for all levels of production throughout the building
  • Ensure that ordering and purchasing are done to maximum efficiency, profitability and Quality for the operation
  • Achieve location food and beverage cost objectives
  • Ensure that all outgoing orders are produced, packed and dispatched with extreme efficiency and without compromise to quality.
  • Ensure the efficient use of all returned items, food and otherwise
  • Supervise maintenance program for the production facilities
  • Maintain NY Department of Health Code Standards
  • Maintain a clean and orderly kitchen environment
General Management:
  • Manage the Production facility and team so that quality levels are strictly maintained to Food Inc standards Exceptional leadership skills, including motivation and goal setting
  • Create and manage all daily, weekly and monthly reports required
  • Manage hourly kitchen staff booking and efficiency so that labor costs are minimized and consistent with expected performance
  • Assist in recruiting, train and supervise all kitchen personal on site
  • Working with onsite GM on staff motivation and communication
Food development:
  • Quarterly (seasonal) menu development with Food Inc. chefs. Emphasis on creating dishes that are original, delicious and complimentary to a fine dining experience. Low production costs and high retail value
  • Maintain Company database of recipes and food photography
  • Implement standards of presentation set by CCL and the FI chefs
  • Continuous exchange of creative food concepts and ideas with Food Inc.  consulting chefs
  • Development, management and introduction of catering menus to banquet clients
